PARMESAN RAINBOW PASTA


Yesterday was one of those days, where i could not find anything to make for dinner. I looked in the pantry, the fridge, the freezer, the pantry again, the fridge again and i just could not come up with anything. Eventually I came up with this. It was easy, i used what i had on hand and it tasted great! 

It is Spaghetti with chicken, spinach, red bell pepper, and carrots. I wish I had purple onions or egg plant and yellow peppers too. I just think that would have been beautiful. I thought it looked "fallish" though, which i liked.

We had a good day yesterday. [the little one] is getting teeth, so she has been kind of fussy the past week and she dropped down to one nap which makes for tired evenings, but she is still as sweet as ever. She walked across the kiddy pool today all by herself. She still doesn't walk outside of the water, but she does inside of it. [the man] is doing great at work and i am so proud of how hard he works and how wonderful of a man he is! (i don't mean to brag, but i am one lucky girl!) Let's see, oh yeah i took some newborn pictures yesterday and some of them turned out really cute (that is kind of how it goes with newborns, you take a lot of pictures to a few great ones). 

I am brainstorming Tee pee making for [the little one] for Christmas. I had one pretty much picked out, but then i asked [the man] what he thought and he wants to make a "real" tee pee, so i have been researching that as well. I am way more excited about it now! If you have any advice I am all ears! I have also been researching carrot cake recipes for [the man's] birthday. Any suggestions?

 I personally am doing well. Just enjoying being a mom and wife and taking pictures when i can. I have been slacking on my exercising this week, so need to get back on track, but all in all our life is great. Birthdays are coming up for [the little one] and [the man] so have been preparing for that. We get a long weekend this week, so i am counting down the minutes!

I've been happy lately, very happy. I feel blessed.

PARMESAN RAINBOW PASTA

INGREDIENTS

2 chicken breasts chopped
4 servings spaghetti
1 cup chopped carrots
1 cup chopped red peppers
2 tsp minced garlic
1/2 tsp celery salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper (you could use 1/4 tsp, but we really like pepper)
1/4 cup grated Parmesan cheese (i used the kind that comes in a bottle or jar) fresh would be delicious, just adjust the milk if you do use fresh, i imagine you would need less.
1/4 c evaporated milk (might need up to 1/2 c) you can use regular milk or cream or half and half too.
2 Tbsp butter

INSTRUCTIONS

Chop Carrots and Red Peppers and Chicken. 

Melt butter in pan over medium high heat. Add Carrots and cook for two minutes, add red peppers, garlic, chicken and seasoning and cook just until chicken is cooked through. Remove from heat and set aside.

Cook Pasta According to package. Drain.

Add chicken and veggies to Pasta and stir. Add Cheese and 1/4 c evaporated milk. Depending upon the cheese it will absorb a lot of the liquid, as it sets it may need more milk to create a nice sauce. Add as much as you would like to create the thinness or thickness of the sauce you would like. Then season to taste (i added more salt to my individual plate, but [the man] prefers less salt).

Would be delicious with No Fail French Bread!
