I don't know about you, but Pinto Beans (and other types of beans) are a staple in our home! We love them! We eat them on rice, in burritos, in quesadillas, in tacos, they are inexpensive and healthy! I came up with this recipe and just love how easy it is.

1. Blend onion and garlic in two cups of water.

Isn't that gorgeous! You don't have to use red onions (or as [the man] insists PURPLE onions!) I usually use yellow, but all i had was red on hand. 

2. Pour in crockpot with 3 more cups of water, 2 cups of stock, 1/4 c taco sauce or a small can of El Pato, 2tsp smoked paprika, 1tsp cumin, 1tsp oregano, 2tsp salt and 1 16 oz bag of Pinto beans.

3. Cook in Crockpot on high for 6 hours.

4. Six hours later you have these beautiful looking and delicious tasting beans! All ready to be eaten in whatever way, shape or form you desire!

We had ours with brown rice, corn, and cilantro. (i would have loved a giant glob of sour cream...but i'm trying to be healthy here...bummer!)



6-8 cups liquid (i usually use half water and half of whatever type of stock i have on hand)
1/4 cup Taco Sauce or a small can of El Pato
2tsp Smoked Paprika
1tsp Cumin
1tsp Oregano
2tsp Salt
1 Onion
1-2 Tbsp minced Garlic
16 oz package of pinto beans


Place rough chopped onion and garlic in blender with 2 cups water and blend. Pour in Crock Pot with additional ingredients. Put all of these ingredients in the Crockpot and stir. Taste the liquid double check your salt and spice. If you want more add more. Cook on high for 6 hours. I usually start out with 6 cups of water. As it is cooking check to see if it needs more toward the end.

Serve with rice, in burritos, tacos, or quesadillas, or place back in a blender or food processor and use as a substitute for "refried" beans.

It is also really good to add some homemade bacon bits to the beans right before serving adds a little additional salt and some crunch!
