CHICKEN FAJITAS



this is one of my absolute favorite meals. almost every time i go to a mexican restaurant this is what i order. i love the way it comes out on a sizzling skillet with steam spewing off of it and everyone in the close viscinity can't help but wishing that is what they were eating too! it comes with a whole plate of sour cream (love love love) and guacamole with warm flour tortillas, i mean seriously you can not beat that! 

i have been trying to master fajitas for quite a while and while i don't know if they are there yet (they change every time) this time they were pretty darn good! they are an easy meal and the onions and the pepper and the chicken are good for you! i wish i was having these for breakfast this morning! maybe we will have them again tonight for dinner!

CHICKEN FAJITAS

1. SLICE AN ONION

2. SLICE THE PEPPERS

(i used one red and one green, you can use any colors)

3. PREP CHICKEN

(i used about 1-2 lbs of chicken breast tenders)

4. CUT IN SMALLER PIECES

5. SEASON

this is the fun part because you really can do it however you want. i use chili powder, cayene pepper, cumin, garlic powder, onion powder and salt. do not be afraid to add a lot of seasoning that is what makes it delicious!

6. SEASON VEGGIES

i usually use the same seasoning but a little less on the veggies. i also add about 1/2 TBS of minced garlic to the veggies before sauteing.

7. HEAT PAN WITH OLIVE OIL

i use medium - medium high heat and i cook the chicken and the veggies separate, it seems to help keep them dry (the good kind of dry meaning there isn't a pan of juice that everything is soaking in) and then you can not overcook one or the other.

8. COOK CHICKEN

do not over cook! chicken tends to continue cooking once you remove it from the heat and yummy tender chicken is not overcooked, so just be careful, theses little pieces cook very quickly, remove the chicken from the pan when done

9. SAUTE VEGGIES

same thing, leaving the veggies a little crispy maintains their color and texture. after you are done, add the chicken back in and toss a few times!

10. ASSEMBLE AND SERVE

you can serve these in a variety of ways. my favorite way is with a stack of tortillas a glob of sour cream, limes and a pan full of meat and veggies. i like to eat them with my hands and rip the tortilla into smaller pieces and pick up the filling with it and then dip it in the sour cream or guac. i figured this made a prettier picture though and we all know it is all about the picture! no matter how you serve them i am sure they will be delicious!

  1. one of my faves as well! its a staple for us! Totally unrelated- i noticed you posted this at 8 am! wow! i cannot even climb down from my loft at least until the sun comes up- which is usually around 10:30 or 11... you and your baby must sleep at night? haha

    1. well, today was a good day, we usually go to bed around 11:30 or twelve and she sleeps until about 7:30 and then i feed her and sometimes she sleeps again until about 8:30, so yes she is sleeping now. it was all of a sudden, one night she just slept through her normal feeding and she has been doing great ever since. i usually go back to bed too, but decided that today i would try to get a few things done before hand. i take it nights are still rough? im sorry, that is so hard!
