TOMATO SOUP

I was doing so good and posting everyday and well, yesterday just got away from me. But don't worry i have a good excuse. I GOT MARRIED. Yep the man and i headed to the court house and tied the knot. I am so excited. Then he had to work and i spent the rest of the day running errands, walking and working on Christmas stockings which might i add are looking great. I will post them when they are finished. But i know you want to see the ring, so here you go...


I absolutely love it and could not be happier I will write more about it later because today is supposed to be wednesday and I am supposed to show you how to cook something delicious and you are in luck because this really is good and even better IT IS SO EASY!

 
 1.  INGREDIENTS

All you need is an onion (i used white because it is what i had, but a sweet one is really good), a can of Diced Italian Style tomatoes, Garlic, and A box of Tomato soup. I used Tomato and Roasted Red Pepper, because i love red peppers, but the other is fine (i got it from trader joes). I did use low sodium, if you use regular just don't add as much salt. 

 2. CHOP ONION

 3. SAUTE ONION WITH 1/2 TBS CHOPPED GARLIC

Saute until it begins to brown.
 
 4. ADD CAN OF TOMATOES 

Simply add the tomatoes to the same pan with 1-2 tsp salt. Let this cook down and absorb the flavors of the onion and garlic. I let mine cook for about 7 minutes. 

 5. BLEND

Take the hot soup and transfer it to a blender or food processor. We have a vitamix, so i put it in and just barely blended it on 1, just to break it down a little bit, you still want it to be chunky. Transfer it back into pan.

  6. ADD SOUP

Add the soup to the blended mixture and let heat through about 10 minutes. Towards the end add about a 1 TBSP chopped fresh basil or 1 tsp. dehydrated. (fresh is way better, for this batch i used the later because my basil froze in the fridge and it really does make a difference).

7. ENJOY!

This is so good with croutons, toast, grilled cheese of course, or something we discovered this last week that we absolutely love is adding tortellini to it. (just cook the tortellini as directed on package and then add to hot soup!) IT IS SOOO GOOD! I don't think i will ever eat tortellini with sauce again, it is so much better in soup.
