MORNING GLORY MUFFINS

 we made these muffins this week and boy oh boy are they yummy! this recipe is from a really great family friend named Bessie Lee. My mom would make these muffins in huge quantities and freeze them. they freeze great, are very delicious and are a wonderful on the go breakfast. [the little one] LOVES them and so does [the man]. that makes life easy for me.

another great thing about these muffins is that you can "hide" so many great things into them. they have carrots, raisins, nuts, seed, we threw in some flax this go around, and coconut! YUM YUM YUM! i think i might just eat one right after i am done with this!


the batter is pretty thick, which makes it incredibly easy to scoop into the muffin papers.


i can smell these while i type. CINNAMON! mmm mmm mmm!

BESSIE LEE'S MORNING GLORY MUFFINS

INGREDIENTS AND INSTRUCTIONS

BAKE FOR 18-20 Minutes at 350 Degrees


In a large bowl mix

3 cups flour
2 1/2 cups sugar

4 t soda

4 t cinnamon

1 t salt

4 c quick oats


then stir in

4 cups grated carrotts

1 cup raisins

1 cup chopped nuts (I always put in more and use at least 2 kinds) (this time we used sunflower seeds, cashews, and flax seeds. it totaled about 2-3 cups all together.)

1 cup unsweetened coconut

2 grated apples or 1 1/2 cups unsweetened applesauce or blended unsweetened canned pears

any other dried fruit or seeds you like


In another bowl beat together

6 eggs

1 1/2 cups salad oil

4 t vanilla

Stir everything together until just combined. Fill cupcake papers in muffin tins about 3/4 full.

You can bake and freeze them or keep the bowl in the fridge for a couple of days and make them as

you want.
