"HEALTHY" CHOCOLATE CHIP OATMEAL COCONUT BANANA WALNUT COOKIES


the name is quite the mouthful isn't it? i wasn't really sure what the best name for them would be and they have so many delicious parts to them, i thought "why not just list them all and call it a name?"

these seriously are amazing . [the man] LOVES them. he takes a bite and without fail says, "these are the most delicious cookies" "these are the best cookies" "i love these cookies." this man LOVES cookies, so you know if he says they are good, that is really saying something. we got this recipe from his aunt (the one that gave us this amazing recipe as well...which we are having for dinner tonight). 

the best part about these cookies besides the dark chocolate chips and coconut would have to be the fact that there is only 1 tsp of oil in the whole batch. i know, right? you can't believe it can you? we made one batch of these and one batch with dates instead of chocolate. i am working on a pumpkin variation right now as well...be excited! :) 

 

"HEALTHY" CHOCOLATE CHIP OATMEAL COCONUT  BANANA WALNUT COOKIES

1 ½ cups oat flour (i made my own just by blending oats in the Vitamix)
1 tablespoon ground flax seeds (also did the same with these)
¾ cup rolled oats
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon imitation coconut or coconut extract
½ teaspoon salt
½ cup packed brown sugar (you could use raw or i am sure honey or agave would be good)
½ cup chopped walnuts
½ cup chocolate chips (the best ones are these. they are large and the flavor and melting temp is perfect!)
½ cup shredded coconut (we used sweetened, but if you had unsweetened you could use that too)
1 teaspoon coconut oil
1 medium banana mashed (about ½ cup)
1 teaspoon vanilla extract
½ cup milk (dairy or non-dairy) (this is my new favorite milk and so i used this)

½ teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon salt
½ cup packed brown sugar (you could use raw sugar or 1/4 cup of honey or agave)
½ cup chopped walnuts
½ cup chopped dates
½ cup shredded coconut (we used sweetened, but if you had unsweetened you could use that too)
1 teaspoon coconut oil
1 medium banana mashed (about ½ cup)
1 teaspoon vanilla extract
½ cup milk (dairy or non-dairy) (this is my new favorite milk and so i used this)

Preheat oven to 350°F.

Combine all the dry ingredients in a bowl.

Combine all the wet ingredients in a separate bowl. Mix the dry and wet ingredients together, until
well combined.

Use a medium-size ice cream scoop or a large spoon to scoop batter onto a cookie sheet lightly greased or covered with parchment paper.

Bake for 14-18 minutes, rotating the pan halfway through cooking, or bake until the edges of the
cookies are light brown.

Makes about 14 cookies.
