BAKED PARMESAN CHICKEN


I think it would be safe to say that my photography skills and cooking skills have increased since the last time i posted this meal


 yeah, i think i would rather eat the one on top. 

just evidence that if you work at something long enough you get better! 

(it probably also has a little bit to do with the purchase of a new camera as well... i can't accredit it all to my "hard work") just kidding. but it is fun to see improvement.

This is still one of my favorites and so i thought i would share it again. This time I made the chicken with some yummy really easy pasta. 

I cooked about 4 servings of pasta according to the package instructions. Meanwhile, i caramelized an onion, and added about a half a bottle of pasta sauce. Once the noodles were finished cooking and drained i added them to the sauce and onion along with a hand full of grated mozzarella cheese. I warmed this all through on medium heat (about 1 minute, just until the cheese melts). 

Serve with delicious chicken and chopped spinach on top (mostly just for color). 

Season the pasta to taste, i think i salted my onion, but other than that it was pretty spot on just by itself and with the saltiness of the chicken they lend themselves really well to one another.

BAKED PARMESAN CHICKEN
Serves 6 (3 pieces for each person)
6 Chicken Breasts (cut into thirds)
1 Cube Butter (i use salted)
1 Cup Ritz Cracker Crumbs (you can used saltines, cheese crackers, really any kind, but be mindful of how salty they are and add salt accordingly)
1 Cup Parmesan Cheese
1 Tsp Garlic Powder
1 Tsp Onion Powder
1 Tsp Smoked Paprika
1/2 Tsp Pepper
1/2 Tsp Salt
Preheat oven to 400 degrees Fahrenheit. 
Melt butter on stove or in Microwave. 
Cut Chicken into thirds and set aside. 
Mix Cracker Crumbs, Parmesan, Garlic, Onion, Paprika, Pepper and Salt together in gallon Freezer bag. 
Dip each piece of chicken in butter, transfer into bag of crumbs and cover completely. 
Place on cookie sheet or in large glass 9x13 inch casserole dish.  
Once all pieces are covered and placed, place pan in oven for 15-20 minutes or until chicken juice runs clear.
Remove from oven, cool slightly and ENJOY!
Serve with your favorite type of pasta or the one that is explained and shown above.
