GRILLED BEAN BURRITOS


 Simple right? YES and that is why we love burritos and they are a major staple in our home. My history with burritos goes way back to my child hood. My mom would often make a large amount of burritos and so we would usually have leftovers in the fridge that we could eat as snacks or meals. We ate them with toppings or without, hot or cold, inside or outside, you get the drift.  Then i went to college and that is where the real love began. Ask any of my roommates and they will agree that one semester of college i ate two bean burritos every day for dinner. Two tortillas, cheese, sour cream and green Tabasco. EVERY DAY! i never got sick of them in fact i craved them. so needless to say i love these little guys for their simpleness, versatility, delicious taste and some of their health benefits. 

1. You need a tortilla and beans and anything else you want on top (olives, corn, tomatoes, sour cream, hot sauce, meat...) I used beans, tortillas, olives and cheese on these and topped with corn, onions, spinach, sour cream and hot sauce.
  
 

2. Spread some beans on  the tortilla with olives.

3. Add cheese. (any kind is fine. i usually use cheddar or monterey jack)

4. Roll or fold is more like it.

5. Place fold side down on skillet over medium heat.

6. When brown flip over and grill the other side.


7. Top with your favorite toppings and ENJOY!

GRILLED BEAN BURRITOS

INGREDIENTS (use any of the following with your tortillas and beans)

tortillas
beans
sour cream
salsa
olives
cheese
corn
tomatoes
lime
onions
meat
lettuce
spinach
cabbage

INSTRUCTIONS

fill tortillas with beans and cheese (and other dryer ingredients)

fold

grill fold side down on skillet over medium heat

flip

remove from heat

top with other ingredients

ENJOY!

NOTE: it is best to fill with dryer ingredients and top with wetter after cooking has taken place.

    I'm not on facebook so I haven't been able to follow you all this time like my sisters, but I just came across your photography blog on pinterest and so I clicked the link to your blog. You are SO beautiful STILL! I've always thought you were one of the most gorgeous girls I've ever seen, and here you are like 15 years later and even more beautiful than when I was idolizing you while running hurdles in 7th grade. You look so happy- I'm so glad to have seen how you were doing lately!
